BARANG Takes Over the Deli: A New Chapter in Mare Street Market’s Talent Story
For one month only, the deli at Mare Street Market King’s Cross belongs to BARANG. From 5 August to 5 September, chef Tom Geoffrey is bringing his acclaimed Cambodian-inspired cooking to Lewis Cubitt Square, ahead of BARANG’s first permanent restaurant, opening in Soho later this year.
It’s the kind of booking that has become a hallmark of Mare Street Market: a chef with real momentum, given a real stage.
From Bristol to Borough, via Bangkok
Tom Geoffrey founded BARANG in 2023, drawing on frequent trips to Cambodia since 2017 to shape a style of cooking that’s unmistakably his own. Khmer flavours built around British seasonal produce, cooked hard and fast over open fire. What started as a run of sell-out pop-ups has since taken him around the world: a hugely acclaimed seven-month residency above the Globe Tavern in Borough Market, stints at Carousel, Oranj, Mambow and Hill & Szrok, and kitchens taken over as far afield as Chenin in Bangkok and Winona’s in New York. In March 2025, he returned to Cambodia for a sell-out collaboration with chef Tim Pheak at Phnom Penh’s Bai Sor.
At King’s Cross, expect the dishes that have built that reputation: big, punchy flavours, and a menu drawn straight from Tom’s travels. Running through the whole of August and into early September.


Why Mare Street Market Is the Right Stage
BARANG’s residency isn’t a one-off so much as it is the latest proof of what Mare Street Market has always set out to be. As founder Marc Francis-Baum puts it, the venue “continues to grow as an emporium of talent”, a place built not around a single kitchen or a single concept, but around backing the people behind them.
That’s visible everywhere you look in the building. Upstairs, Island brings next-level surf and turf from chefs Brad Carter and Tom Brown, a partnership serious enough to have already caught the eye of the Michelin Guide.
Across both the Hackney and King’s Cross sites, Gizzi Erskine has returned as Chef Creative Director, reshaping the menus and describing Mare Street Market in terms few venues earn: “Mare Street Market is my home. It has my DNA in the walls, and it feels natural to come back.”
And now, for one month, the ground-floor deli becomes BARANG’s kitchen, a launchpad for a chef on his way to his first permanent site.
Put those together and a pattern emerges. Mare Street Market isn’t just somewhere to eat well, though you will. It’s a destination built around the people cooking, and increasingly a home for the brands, chefs and creative projects shaping London’s food scene next, a place where a rotating residency can sit comfortably alongside the market’s more regular food and beverage happenings.
